The migration was made to change the theme and keep all functionalities. The live site has a custom made theme built by old developers who built as well the custom plugin connected with LearnDash and WooCommerce. We installed Divi theme of the staging site and rebuilt the whole website, we changed some plugins but mainly the main plugins and the custom plugin are still there on the staging site and working. I prefer to migrate all tables, that would cover everything, but would it cause any problem with the staging sites like Plugins/themes problems......
