Custom flower delivery website inventory features

My little online flower delivery business called bouquet day is just about to launch on 4 January 2019. I have one style of bouquet available in different sizes which are delivered to customers. I also have some extra treats to add to my bouquets, so they have been easy enough to set up. I have been able to do basic edits to the website's HTML, but I need help with two particular features: 1) As a customer selects a date for delivery, it needs to link to a unique inventory for that specific date. I also need to be able to customize the inventory each day (I can do this via HTML if needed). I.e. If a customer orders their bouquet 2 weeks in advance, it will subtract the stock from the inventory for two weeks time, not from today's inventory. Currently this inventory applies to all dates selected which won't be very helpful for what I need! My current date picker will need to be updated to link to a date based inventory. Ideally I would like a calendar view of when my orders are selected for delivery.. 2) Since I have one type of bouquet, available in three different sizes (called scoops) I was hoping to have the bouquet inventory (for each day) be available in a cluster. For example: One scoop is the smallest bouquet so if ordered, that would subtract 1 unit from my daily inventory. Two scoops is the medium bouquet, but is double the size of the one scoop, therefore I would want 2 units removed from my total inventory of flowers available. The three scoop bouquet would need to subtract 3 units from the daily inventory. An app that currently does this is called connected. However I want this feature connected on a date by date basis for the first job listed above.
