Helping Hand Organizing Ecommerce SQL Server DB

I'm Organizing 15 year worth of stuff added to the DB, by different .net programmers (me inc) It's just much for me, to learn all the SQL, the more i learn the more i see that i know nothing. and i do not want to do the mistake of rewritting SP, Designs, to find out a month ltr... mmm maybe this wasn't the best solution. I already got perfomance problem under control, was continuasly 40-60% CPU down to 0-5% now. but now i have ton of table,sp,views that are doubled. to get an idea. 1gb of data 3gb of indexes +950 DB objects All is lucky pretty flat and simple, removed most sp, that queried, view on view on view At the moment its near impossible to make any good stats, so much tables you have to add a query, that it takes a day, to then discover, it worthless. its a easy job for any person with SQL knowledge. I'm Looking for some one good knowledge: T-SQL SQL server 2014 SQL Admin SQL Perfomance ASP.NET (vb) would be Perfect but not crucial for this task. Good english,dutch or Portugues Work indempented bringen own ideas Organized, but not to an extreme. And get the Job done ASAP. develop new features and give me a short explanation. No Documentation needed at the end a diagram with the main structure. I have total control of the server, upgrades, changes etc can be done fast. since its impossible to estimate how many hours this is going to take.
