Sorting what was a PDF now Excel spreadsheet according to categories

I have some pdf data that has to go in an excel spreadsheet and then needs to get sorted by categories. I think I managed to do the first part so I could provide you with the excel sheet. The sorting is where the problem is at since there are no formulars given and it isn’t uniform. If you could manage to do that and extract the information like E-Mail address etc. that'd be perfect.
