Dedicated server rescue mode files need recovering

Hello!
Was setting user as owner of a directory with chown, and accidentally made him the owner of the root, recursively. This made him the owner of every single file and directory in the server, stopping processes such as apache, etc.
Not realising I had made this mistake, I hard restarted the dedicated server from my host's control panel, in attempt to fix the webserver. Big mistake. Now I have no access through SSH, no processes are running as they are all under the wrong users, etc. Also, I think I deleted the user, but I don't remember.
My host (OVH) has a rescue mode option, which I can put it in. They tell me from here I can boot it from that, and access the server through SSH. I connected through SSH, and the disks are not mounted.

So, the job is to connect with SSH (I will put it in recovery mode), mount the SSDs, and recover the data.
This is an extremely urgent job, as I am losing customers to my business, as it is entirely server-based. I have no backups, foolishly, so these files are extremely important, a bit of a life/death situation.
