Hi, After reading your document with project details and descriptions I think I can help you with schematics diagram and PCB layout design (actually I'm sure I can help you). As I see the LPC2105BBD48,151 MCU is obsolete so as you've asked I can select an efficient and cost effective alternative, for example SAMD21 or one of STM32 series with USB support. These MCUs are without wireless support, so they could ideally fit your analogue circuit. It is possible to select an MCU with build in ADC of required precision or just use a stand alone one. To support the wide (5-48V DC) supply voltage range it would be necessary to use buck voltage converter possibly with some smoothing filters for the analogue part or to use a separate linear regulator for analogue circuits to reduce noises in the input signal. I can make the drawings in any of the listed CAD software (Altium, Eagle, or KiCad), I can show you examples of my work if you are interested (not attachable in proposal). As final result I will provide the drawings in selected CAD format and also the gerber files for PC fabrication and assembly. Thanks.

I am not sure if it can be single, is there any reason for single layer, the cost of double layer and single layer PCB is negligible. I can suggest you use TI MO or STM32F0 series. If you do not have a ready schematic you would need a prototype first,, thereafter you might need to make some changes.
